As well as sharing experiences with our friendly online community, registered members are able to contact our experienced online team. The Centre is staffed during office hours and the online team aim to reply within 24 hours.

Psychologists and experts from other Maggie's Centres and partner organisations also facilitate some group and individual sessions.

Chicken Sorito with cauliflower rice.

serves 3.

you will need; 2 tsps sea salt, 2 tsps sweet paprika, 6 chicken thighs with skin on, 1 tblsp olive oil, 1 onion peeled and diced, 4 cloves garlic chopped, 1 red chilli finely chopped, 1 red pepper chopped, 1 tsp dried thyme, 1 large tomato diced, 8 oz chicken or veg stock, 1 large cauliflower riced, juice of 1 lemon.

Method

1. pre heat the oven 190'C/gas 6. In a small bowl mix the sea salt and paprika together and then rub into the skin side of the chicken thigh.

2. Place a cast iron pan over a medium heat and add the olive oil. When the oil is hot add the chicken thighs skin side down and brown for 2 minutes. turn the chicken over and brown under side. Remove from pan.

3. Add onion, garlic, red pepper, chilli and thyme to the pan and cook gently until the onion and pepper starts to go soft. Add the tomato and cook through.

4. Add the stock, lemon juice, cauliflower rice and stir to combine. Sit the chicken thighs on the top and bake in the oven for 25mins or until the thigh are cooked. serve.

I cannot remember where I got this recipe from but it is a regular favourite. I have made it using form pieces of fish which also works well.

To rice cauliflower either grate florets on a large grater or put florets into a processer and process for 30 seconds or until the cauliflower resembles rice.
