Hello, this month I thought I would concentrate on something simple and ofcourse nutritious. It makes good use of lentils as a protein source which is ofcourse recommended as part of a healthy balanced diet.

Serves 4 and makes a good mid week meal.

Lazy Chicken and Spicy Lentils

You will need; juice of 2 limes, 3 cloves garlic crushed, 1 tsp chilli flakes, 1 tsp dried thyme, 1 tblsps oilve oil, 4 chicken thighs skin on, 1 onion chopped, 200grms of chestnut mushrooms sliced, 160grms of dried green lentils, 200mls of chicken stock.

Method

1. Combine the lime juice, garlic, chilli flakes and thyme in a bowl to make a marinade. Season with pepper and salt and toss the chicken in the marinade for about 2 hours or overnight in the fridge.

2. preheat the oven 180'C. In a frying pan and oil brown the chicken, set aside.

3. Scatter the onion and mushroom in the bottom of an oven proof dish, add the lentils and place the chicken peices on the top. Add the remaining mairnade juices to the stock and pour over the chicken and veg. Cover the dish and place in the oven.

4. Bake for 20mins and check that more stock is not needed. Cook for 20mins more with the lid off. Serve with green vegetables or a salad.
