Oriental stir-fry

This is a really quick, easy and delicious recipe that we found in a supermarket magazine. Made today at Maggie's Glasgow. Yummy!

Ingredients:
2 spring onions (sliced)
2 tsp fresh ginger (grated
Half a red pepper (sliced)
Half a yellow pepper (sliced)
1 carrot (sliced)
150g chicken (cubed)
Handful of cashew nuts
1 tbsp soy sauce
1 tbsp sweet chilli sauce
1 tbsp sesame oil
Fresh coriander

Method:
1. Add the cubed chicken and sesame oil to a pan and cook thoroughly.
2. Add all other ingredients, stir and cook for a further three minutes.
3. Serve with rice or noodles.

Simple!

The chicken provides a good source of iron and protein, while the nuts also provde proteiin. The carrots and peppers are high in the antioxidant beta-carotene.
